MycoStruct Poster Now Available

We are pleased to share the new MycoStruct project poster, providing a clear overview of the project’s concept, objectives and expected impact.

The poster introduces MycoStruct’s approach to developing sustainable, mycelium-based complete protein structures for whole-cut protein products. It highlights the use of secondary feedstocks, the scale-up of fermentation and downstream processing, and the project’s ambition to deliver nutritious protein products while improving sustainability and circularity.

It also presents the project workflow, from feedstock selection and fermentation to product qualification, demonstrator production, and market and consumer research and testing, together with the partners involved in these activities.
